Frugal Sunday – Carrot Soup

When I went to the grocery store last week, I bought a bunch of carrots only to find that I had a bunch when I got home. So what do you do with and abundance of carrots? Other than Carrot Juice!

Sunday’s we have been going out to lunch and don’t feel like having a big meal in the evening. Soup has been our go to light meal hence I got the idea to make carrot soup.


It starts out like the above picture, carrots, celery, onions, bay leaf and minced garlic. I deglazed it with some leftover white wine and added some homemade chicken broth watered watered down with House Water. I then added a potato, diced and cooked the soup for 30 minutes. When it was done cooking I removed the bay leaf. Then it was time to wiz it with my handheld blender! Here is the final produce.


Today ride was lonely. I got up late thus I hurried to get out of the house and meet up with the Flatlanders. When I came out of Dunk City (Florida Gulf Coast University -FGCU) I saw them flying home down Ben Hill Parkway. There was no catching them, so I did my own thing for 30 miles including 4 hill repeats.
