Breakfast Eggs and Oatmeal

My daily breakfast, well most days, is Eggs and Oatmeal. Just about every day I exercise in the early morning.  I leave the house at o’dark thirty and have it timed so I can be home, take a shower, shave, get dressed, make the bed, and eat with just enough time for my commute to work.  This requires a quick, easy and nutritional breakfast with quick being the operative word.  Enter oatmeal.  It’s a good grain, easy to fix and keeps me satisfied until snack time.  I add to this a side of fruit and 1/4 cup of non fat Greek yogurt making this a complete 350 cal breakfast. I do add ketchup and today I added some spinach to the egg mixture.

Ingredients
  • 1/4 c oatmeal (not quick oats)
  • 2 eggs
  • 1/4 c water
  • Cooking spray
Instructions
  1. Spray bowl with cooking spray. Add oats, eggs, and water mix well. Microwave for 90 seconds.
