Pasta Fagiole

  • Leftover ham bone with some meat still attached
  • 16 oz Beans, cannelloni or navy soaked overnight
  • 1/4 lb Pancetta or bacon
  • 1 large onion diced
  • 1/4 tsp red pepper flakes
  • 3 celery, diced
  • 3 large carrots, diced
  • 3 tbs tomatoe paste
  • 8 cups chicken broth preferably homemade
  • 4 cups water more as needed
  • 1 14oz diced tomatoes
  • Salt &. Pepper
  • 8 oz diced ham leftovers
  • 8 oz pasta – dittalini or other small pasta


  • Dice pancetta, add to large stock pot cooking until some fat is rendered.  Add diced onion cooking until softened. Add carrots and celery, cook for 5 minutes.  Make a warm spot in the pot, add red pepper flakes and toast. Stir in red pepper then make another hot spot, add tomatoe paste cooking for a few minutes then stir into ingredients.  Add can of diced tomatoes.
  • Warm chicken broth in microwave while preparing the above then add to pot. Warm water in microwave then add to pot. Taste and add salt and pepper to taste.  Let cook until the beans show signs of splitting or breaking, about 2 hrs.
  • Remove ham bone. Add diced ham. Add more warmed water if needed. Bring to a light boil. Stir in pasta cooking for another 10 minutes.
