What’s Cooking?

Mini Hazel Nut Chocolate Crostata

I made these last Saturday for Valentines Day Dinner.  All I can say is my food processor bowl is not big enough to made the crust and I did it by hand.  I’ve never been good with pie crusts and rolling this out required plastic wrap and chilling the dough several times to get it right.  They tasted good but I don’t think I’ll make them again.  Here is a link to the recipe over at Savoring Italy.

Corn and Cheese Chowder

I made this soup Tuesday, just to have some soup on hand for the week.  I like to have soup and salad for lunch.  It is a rich soup with half and half, cheese and lots of corn.  I had some “ugly” ears of corn I got from Max at the farmer’s market and decided to use them in this soup.  I wrestled with using the Pioneer Woman’s recipe Corn and Cheese Chowder and Ina Garten’s recipe Corn and Cheese Chowder.  I ended up doing a combo of these and omitting the potatoes from Ina’s.  It tasted great.

Beef Filet, Lobster Risotto and Sauteed Spinach

Last night I made a wonderful lobster risotto. Since Publix had lobster on sale this week I thought it would work well in risotto.  I just cooked two tails in water then removed the meet.  Just before adding the cheese to the risotto, I added the meat, chopped up of course.

The beef I grilled and the spinach was onions, garlic in olive oil.

Did you cooking anything special this past week?

Every thing you made looks really nice! Making frolla and pie crusts is a lot of work, but I think yours look delightful!!
